Janchi-guksu is a traditional Korean noodle soup served in a clear, savory broth with thin noodles and simple toppings. Light yet satisfying, it’s a dish often enjoyed at celebrations and everyday meals alike.

1. Slice zucchini, carrot, and green onions into thin strips. Saute lightly until just softened. Make egg sheets in a pan, then slice into thin strips.

2. Prepare the broth by boiling water with coin seasoning and soy sauce.

3. In a bowl, mix all sauce ingredients well and set aside.

4. Cook somen noodles according to package instructions, then rinse under cold water and drain well.

5. Place noodles in a bowl, top with sauteed vegetables and egg strips, and pour hot broth over the noodles.

6. Serve with the sauce on the side or spooned on top, to taste.
